This past Wednesday, June 21, was the official start of summer! To celebrate the summer solstice, I'm wondering if anyone has any summer salad recipes? As my wife and I make the transition from vegetarian to vegan (slowly, but surely), we're looking for ways to up out vitamins and nutrients without taking supplements or sacrificing taste. Recently, I've been on a crazy chickpea kick (talk about protein!). My current go-to summer salad is: -One can of chickpeas, drained and rinsed -A quarter cup of onions (we use purple), tomatoes (swapping between roma and cherry), and cucumbers -One sprinkle of fresh dill, garlic powder, salt, and pepper -One hearty squeeze of lemon juice -Drizzle of olive oil (or avocado oil)--can't go wrong if you wanna substitute for pesto! -Stir, marinate for 20 minutes (or eat fresh!), and serve (not my photo, but a close example of this summery goodness)
